Right now in Lebanon, TN, there is a huge and popular fair going on. It has always been called the Wilson County Fair but as of this year it is becoming the Tennessee State Fair. It is the absolute best thing to do every year in August! From the rides to the food, it is not something you want to miss out on.

I grew up going to this fair and have already taken my boys this year! We rode all the kid rides with our boys, ate ice cream, pet farm and exotic animals, played fair games and won hammers, ate fair food, and left for home with a bag of cotton candy. Even after all of that, there is still so much we didn't get to do and plan to venture back later this week.

Growing up, one task I was always expected to accomplish when going to the fair was to grab my Dad a bag of cotton candy. Getting this bag of cotton candy just became tradition. Every year on the last night of the fair, I would be running around trying to find a concession open to get a bag of cotton candy. It's not even my task anymore but I still find myself grabbing a bag to take home.

But what happens when you can't find a place like the fair to go to for cotton candy. Well I decided it was time to fix that by making these cotton candy flavored sugar cookies. These are extremely soft and chewy cookies perfect for any occasion. It took me a few batches and taste testing to get the cotton candy flavor strong enough but I've definitely found a winner!

Ingredients

  • 1 cup unsalted butter (dairy-free), room temperature
  • 1 1/4 cup granulated sugar
  • 1 egg replacement (Bob's Red Mill) OR 1/3 cup aquafaba
  • 1 tsp cotton candy flavoring (LorAnn brand)
  • 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350 degrees F and line baking sheet with parchment paper. Set aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a small bowl, mix together 1 tbsp egg replacer and 2 tbsp water. Set aside to allow time to thicken.
  4. With a mixer, cream together the sugar and butter until light and fluffy. Add the egg replacer mixture, cotton candy flavoring, and vanilla extract. Mix until combined.
  5. Slowly add the flour mixture while mixing on low. Once dough comes together, separate dough in two. Add one batch of dough back to the mixer and add pink gel food coloring. Mix slowly until incorporated. Remove and lightly wipe down bowl. Then add remaining dough and add blue gel food coloring and mix on low until incorporated.
  6. Using a 1/4 measuring cup, add half blue and half pink dough. Roll together into a ball and place on lined baking sheet. Bake for 10-12 minutes.

Recipe Notes

You do not have to add coloring to the dough but to give it added look of cotton candy, use electric pink and blue gel food coloring. Only use a small dot of coloring, a little goes a long way.

Underbake the cookies, the bottoms will be lightly browned. The centers will continue to bake as they cool.

To make as a standard recipe, simply use regular unsalted butter and 1 large egg at room temperature.
